Husk, Charleston Chef Sean Brock will create his menu on the eve of Thanksgiving—not because he likes the added stress, but because his innovative, farm-to-table Southern cuisine is based on what’s freshest. A feast inside the Victorian house in historic Charleston nods to the way the pilgrims did things, cooking meals made with ingredients procured straight from the land and sea. Though the three-course prix fixe menu ($45 per person) isn’t yet set, you can look to last year’s dinner for clues: the menu featured dishes such as wood-fired clams from a local clammer and North Carolina cornmeal-dusted catfish with smoky butterbeans and field peas. Thanksgiving wouldn’t be complete without turkey and Brock does it right—last year he paired it with homemade mascarpone cheese potatoes, wood-fired Brussels sprouts, cornbread stuffing, Tennessee foie gras and turkey gravy.
